A broad review of the hygienic condition of a manufacturing site. This will include any shortfall in factory fabric, plant, operational practices, good manufacturing practice, air management, process flows, people flows, cleaning practices, microbial monitoring and process control. The interface between HACCP and hygiene management will be discussed and clarified.
